Sourdough Breakfast Strata

Method
Preheat oven to 350°F. Grease a 9x13 inch baking dish with butter.
Cut sourdough bread into ¾-inch cubes; spread evenly in the prepared dish.
If using bacon, cook until crisp, then crumble. If using other protein, ensure it is cooked and diced. If using vegetables, prepare (chop spinach, dice peppers or onions, etc.).
In a large bowl, whisk together eggs, milk, salt, black pepper, and dried herbs until smooth.
Stir in grated cheese, cooked protein, prepared vegetables, diced onion, and minced garlic until evenly distributed.
Pour the egg mixture evenly over the bread cubes in the baking dish, pressing gently so the bread absorbs the liquid. Let sit 10 minutes.
Bake uncovered at 350°F for 40–50 minutes, until the top is golden brown and a knife inserted near the center comes out clean.
Let rest 5 minutes before serving. Cut into 8 squares and serve warm.
