Spicy Shrimp Pasta Aglio
Garlic-forward pasta dish with spicy shrimp, olive oil, and red pepper flakes. Shrimp and pasta cook together briefly, creating an emulsified, minimal sauce.
Ingredients
Method
Bring a large pot of salted water to a rolling boil.
While water heats, mince garlic and pat shrimp dry with paper towels.
Add pasta to boiling water and cook until 2 minutes before al dente; drain, reserving 1 cup pasta water.
In a large skillet, heat olive oil over medium-high heat until shimmering; add minced garlic and red pepper flakes, stirring constantly for 30 seconds until fragrant.
Add shrimp to the skillet in a single layer; season with salt and black pepper. Cook 1 minute on one side without stirring, then flip and cook 1 minute on the other side.
Add drained pasta and 1/2 cup reserved pasta water to the skillet; toss gently over medium-high heat for 1–2 minutes until shrimp are opaque and pasta finishes cooking. Add more pasta water if sauce appears too dry.
Remove from heat; stir in lemon juice and zest, then fold in most of the parmesan and fresh parsley, reserving some for garnish.
Divide among bowls; top with remaining parmesan, parsley, and sliced green onion if desired. Serve immediately.
