West African grilled meat skewers coated in a spiced peanut and chili crust. Meat is marinated, threaded on skewers, grilled until charred, then rolled in the spice blend.

In a large bowl, combine minced onion, garlic, ginger, paprika, peanut butter, vegetable oil, lime juice, and salt to form a marinade. Mix until smooth.
Add meat cubes to the marinade and toss to coat evenly. Let sit for at least 30 minutes, or up to 8 hours in the refrigerator.
In a shallow dish, combine ground peanuts, paprika, cayenne or chili powder, and garlic powder. Set the spice coating aside.
Thread marinated meat onto skewers, leaving a little space between pieces. Pat meat dry with paper towels just before grilling.
Heat a grill or grill pan to medium-high heat. Grill skewers for 10–15 minutes, turning every 2–3 minutes, until meat is cooked through and the exterior is lightly charred.
Remove skewers from heat. While meat is still hot, roll each skewer in the spice coating to coat all sides generously.
Transfer skewers to a serving plate. Arrange sliced red onion and lime wedges alongside. Serve warm.
