Taco Casserole
Layered casserole combining seasoned ground meat, beans, tortillas, and cheese baked until hot and bubbly. Assembled in a single dish and baked until the filling is heated through and cheese melts.

Preheat oven to 350°F. Dice the onion and mince the garlic. Drain and rinse the beans.
Heat 1 tbsp oil in a large skillet over medium-high heat. Add the ground meat and cook, breaking it apart with a spoon, until browned, 8–10 minutes. Drain excess fat if needed.
Stir in the diced onion and minced garlic; cook 2 minutes until softened. Add the taco seasoning, beans, and salsa; simmer 5 minutes until flavors blend.
Spread a thin layer of the meat mixture on the bottom of a 9x13-inch baking dish. Arrange 4–5 tortillas to cover the bottom, overlapping as needed.
Spread half of the remaining meat mixture over the tortillas. Sprinkle 1 cup of cheese over the filling. Layer remaining tortillas, then remaining meat mixture, then top with remaining cheese.
Cover the dish with foil and bake for 20 minutes. Remove foil and bake an additional 10–15 minutes until the cheese is melted and bubbly.
Remove from the oven and let rest 5 minutes. Serve hot with sour cream, additional salsa, or other toppings on the side.
