Ingredients

2 servings
Chickpeas1.5 cups cooked
Flatbread2 sheets
Cucumber1 small
Red onion1/4 medium
Spinach1 cup loosely packed
Cilantro2 tbsp chopped
Lime0.5
Garlic1 clove minced
Ginger root1 tsp minced

Method

1

In a mixing bowl, combine yogurt, garam masala, minced garlic, and ginger root.

2

Add drained chickpeas to the yogurt mixture and toss gently to coat evenly.

3

Heat coconut oil in a skillet over medium heat. Add the chickpea mixture and cook for 8–10 minutes, stirring occasionally, until chickpeas are warmed through and edges begin to soften.

4

Squeeze lime juice over the chickpeas, taste, and adjust spices if needed. Remove from heat.

5

Warm flatbread briefly in the skillet or over a flame until pliable.

6

Lay flatbread flat. Divide spinach and cilantro between both wraps, creating a bed on each.

7

Spoon warm chickpea filling into the center of each flatbread, dividing evenly.

8

Top each wrap with sliced cucumber and red onion. Fold or roll tightly and serve immediately.
