Thai Fried Rice

Dice the protein, carrot, onion, and garlic. Measure out peas and have all ingredients within arm's reach.
Heat oil in a wok or large skillet over medium-high heat. Add the diced protein and cook until just cooked through, about 3–5 minutes. Transfer to a plate.
Add onion and garlic to the same wok and stir-fry for 1 minute until fragrant.
Add the chilled rice, breaking up any clumps with your spoon. Stir-fry for 2–3 minutes until rice is heated and grains separate.
Add carrot, peas, soy sauce, fish sauce, lime juice, and sugar. Stir-fry for 2 minutes until vegetables are warm and flavors combine.
Return the cooked protein to the wok and toss together. Divide into bowls and top with cilantro, red pepper flakes, and sesame seeds.
