Veggie Burger

In a large mixing bowl, combine the cooled cooked grain, mashed beans, diced portobello mushroom, and chopped spinach.
Add the minced onion, garlic, breadcrumbs, tahini, cumin, salt, and black pepper to the bowl.
Mix gently but thoroughly until the mixture just comes together; do not overmix. The texture should be chunky but cohesive.
Divide the mixture into 4 equal portions and gently shape each into a patty about 3/4 inch thick. Let rest 5 minutes.
Heat oil in a large skillet over medium-high heat. Once shimmering, carefully add burgers.
Cook 4–5 minutes per side without moving them until golden brown and crispy. They should release easily from the pan when ready to flip.
Toast the buns lightly if desired. Spread condiment on bottom bun, add cooked patty, top with desired toppings and bun crown.
Serve warm with extra sauce on the side, alongside salad greens, pickles, or roasted vegetables.
