Turkey Burger

In a mixing bowl, combine ground turkey, breadcrumbs, egg, minced onion, minced garlic, salt, and black pepper. Mix gently with your hands until just combined—do not overwork or patties will be dense.
Divide mixture into 4 equal portions and form into patties about 3/4 inch thick. Make a shallow indent in the center of each patty with your thumb to prevent bulging during cooking. Refrigerate for at least 5 minutes if time allows.
Heat olive oil in a skillet or griddle over medium-high heat until shimmering.
Place patties on the hot skillet and cook without moving for 5–6 minutes until the bottom is browned and releases easily.
Flip and cook the other side for another 5–6 minutes until internal temperature reaches 165°F (74°C) on a meat thermometer. If using cheese, add it in the final minute and cover the skillet to melt.
Lightly toast or warm burger buns if desired. Spread sauce or condiment on the bottom bun.
Layer lettuce, tomato, and red onion slices on the sauce. Place the cooked turkey patty (with or without melted cheese) on top.
Top with the upper bun and serve immediately with additional toppings and condiments on the side.
