Wonton Soup

Mix ground pork, minced garlic, half the sliced green onion, and rice vinegar in a small bowl until combined.
Place 1 teaspoon filling in the center of each wonton wrapper. Wet the edges with water, fold in half to form a triangle, then bring the two corners together and pinch to seal.
Bring vegetable broth to a boil in a large pot over high heat. Add minced ginger and soy sauce. Stir to combine.
Gently add wontons to boiling broth and stir to prevent sticking. Simmer until wontons float to the surface, about 3–5 minutes.
Add bok choy and water chestnuts. Simmer for 2–3 minutes until vegetables are tender-crisp.
Ladle soup into bowls. Drizzle with sesame oil and top with remaining sliced green onion and sesame seeds.
