Apple Cobbler

Preheat oven to 375°F. Peel, core, and slice apples into 1/4-inch wedges.
In a large bowl, toss apples with sugar, cinnamon, and lemon juice. Spread evenly in a 9x13 inch baking dish.
In a small bowl, whisk together flour, baking powder, and salt.
Add cold butter to the flour mixture and use your fingertips to work it in until the mixture resembles coarse crumbs.
Stir in buttermilk until just combined; the batter will be thick and lumpy.
Drop spoonfuls of batter over the apple filling, leaving some gaps for steam to escape. Sprinkle brown sugar over the topping.
Bake at 375°F for 40 to 45 minutes, until the topping is golden brown and a knife inserted into the thickest biscuit piece comes out clean.
Let cool for 10 minutes before serving. Serve warm, optionally with whipped cream or vanilla ice cream.
