Beef and Broccoli Meal Prep

Cut beef into bite-sized strips. Cut broccoli into florets. Mince ginger and garlic.
In a small bowl, whisk together soy sauce, rice vinegar, honey, and sesame oil to form the sauce base.
Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add beef strips and cook 3–4 minutes until browned on edges. Transfer to a plate.
Add remaining 1 tbsp oil to the skillet. Stir in minced ginger and garlic; cook 30 seconds until fragrant.
Add broccoli florets and cook 4–5 minutes, stirring occasionally, until tender-crisp and bright green.
Return cooked beef to the skillet. Pour in sauce mixture and toss everything together for 1–2 minutes until coated and heated through.
Divide cooked grain into four meal-prep containers. Top each with an equal portion of beef-and-broccoli mixture.
Garnish with green onion slices and sesame seeds if desired. Serve warm, or refrigerate and reheat when ready to eat.
