Beef Lo Mein

Slice beef sirloin thinly against the grain. Prepare garlic, ginger, carrot, bok choy, and green onion.
Cook egg noodles according to package directions, drain, and toss with a touch of vegetable oil to prevent sticking.
Whisk together soy sauce, oyster sauce, rice vinegar, and sesame oil in a small bowl; set aside.
Heat 1 tbsp vegetable oil in a wok or large skillet over high heat. Cook beef slices in a single layer for 1–2 minutes per side until browned; transfer to a plate.
Add remaining 1 tbsp oil to the wok. Add minced garlic and ginger; stir-fry for 30 seconds until fragrant.
Add carrot, bok choy, and green onion; stir-fry for 2–3 minutes until tender-crisp.
Return beef to the wok with the cooked noodles. Pour in sauce and toss continuously for 2 minutes until noodles are coated and heated through.
Transfer to bowls and garnish with sesame seeds. Serve immediately.
