Preheat oven to 350°F. If using frozen berries, thaw them and drain excess liquid.
In a large bowl, toss berries with 3/4 cup sugar, lemon juice, and cornstarch. Let sit for 5 minutes, then spread into a 9x13 inch baking dish.
In a small bowl, whisk together flour, baking powder, salt, and 3 tbsp sugar.
Cut cold butter into small cubes and work into the flour mixture with your fingertips until it resembles coarse breadcrumbs.
Stir milk and vanilla extract together, then gently fold into the flour mixture until just combined. Do not overmix; the dough should be slightly lumpy.
Drop spoonfuls of topping over the berry filling, leaving some gaps for steam to escape. If using oat crumble variant, sprinkle rolled oats mixed with a pinch of cinnamon over the filling instead.
Bake for 35–40 minutes, until the topping is golden brown and berries bubble slightly at the edges.
Cool for 10 minutes before serving. Serve warm with whipped cream, Greek yogurt, or vanilla ice cream if desired.
