Chicken Ramen

Slice or cube your chosen protein (chicken breast, chicken thigh, pork, tempeh, or salmon). Mince garlic and ginger; slice green onions and carrots; prepare leafy greens or other vegetables.
If using the fragrant ginger-soy marinade, toss protein with marinade while preparing the broth.
Bring chicken broth (or chosen alternative) to a boil in a large pot over medium-high heat.
Whisk in miso paste if using, then add minced ginger and garlic. Simmer for 5 minutes to infuse flavors. Season with soy sauce or tamari to taste.
Add sliced protein to the simmering broth and cook until tender, about 4–6 minutes depending on thickness. Remove with tongs and set aside.
In the same broth, add rice noodles (or chosen noodle type) and cook according to package directions, usually 3–5 minutes. Add leafy greens in the last minute to wilt.
Divide cooked noodles and broth between bowls. Top each with sliced protein, carrot, and remaining raw vegetables.
Drizzle sesame oil over each bowl, scatter sesame seeds and green onions on top, and serve immediately.
