Miso Glazed Buddha Bowl

Preheat oven to 425°F. Toss sweet potato and brussels sprouts with olive oil, salt, and pepper on a baking sheet.
Whisk together miso paste, honey, and sesame oil in a small bowl until smooth.
Roast vegetables for 20–25 minutes, stirring halfway, until tender and caramelized.
While vegetables roast, heat a skillet over medium-high heat. Season salmon with salt and pepper, then cook skin-side down for 4 minutes; flip and cook 3 minutes more until opaque. Brush with miso glaze in the final minute.
Divide cooked grain and fresh greens between two bowls.
Arrange roasted vegetables and glazed protein on top of each bowl.
Drizzle remaining miso glaze over the bowl, then garnish with sesame seeds and sliced green onion. Serve warm.
