Slice beef thinly against the grain. Slice onion into 1/4 inch thick pieces. Mince garlic and ginger. Slice green onion for garnish.
Heat a large skillet over medium-high heat. Add beef slices and cook until browned on both sides, about 2 minutes total. Remove beef to a plate.
In the same skillet, add onion slices and cook until they begin to soften, about 2 minutes. Add garlic and ginger, stirring constantly for 30 seconds.
Pour in soy sauce, honey, and broth. Stir to combine. Return beef to the skillet and bring to a gentle simmer over medium heat.
Simmer for 5–8 minutes until onions are tender and the sauce slightly thickens. Taste and adjust seasoning as needed.
Divide warm cooked rice between bowls. Spoon beef, onions, and sauce over rice. Garnish with green onion and sesame seeds. Serve immediately.
