Coconut Curry Shrimp

Method
Heat coconut oil in a large skillet or wok over medium-high heat. Add chopped onion and cook, stirring occasionally, until softened, about 3–4 minutes.
Add minced garlic and ginger; stir constantly for 30 seconds until fragrant.
Stir in garam masala and sugar; cook for 1 minute to bloom the spices.
Pour in the canned coconut milk and stir to combine, scraping up any browned bits from the pan. Bring to a gentle simmer.
Add the shrimp and chopped vegetables to the simmering coconut curry. Cook uncovered for 8–10 minutes, stirring occasionally, until the shrimp are opaque throughout and vegetables are tender-crisp.
Remove from heat and stir in fish sauce and lime juice. Taste and adjust seasoning as needed.
Divide the cooked grain or noodle base among bowls. Ladle the shrimp curry and sauce over the top.
Garnish with chopped green onion and sesame seeds if desired. Serve warm.
