Method
In a small bowl, mix softened cream cheese, cooked protein or vegetable, minced scallion, garlic, soy sauce, and sesame oil until evenly combined.
Lay out one wonton wrapper on a clean surface with one corner pointing toward you. Place 1 teaspoon of filling in the center.
Moisten the edges of the wrapper with water using your finger or a brush. Fold the bottom corner up to meet the top corner, pressing to seal and form a triangle.
Bring the two pointed corners of the triangle together and pinch to seal, forming the classic wonton shape. Repeat with remaining wrappers and filling.
Heat oil to 350°F (175°C) in a deep heavy pot or wok. Use a thermometer to monitor temperature.
Carefully lower 4–5 wontons into hot oil, working in batches to avoid crowding. Fry for 2–3 minutes, turning halfway, until golden brown and crispy.
Transfer fried wontons to a paper-towel-lined plate to drain. Maintain oil temperature between batches.
Serve wontons warm with sweet chili sauce, ponzu, or other preferred dipping sauce.
