Preheat the oven to 350°F. Ensure the cream cheese is softened to room temperature for easy mixing.
Shred the cooked chicken into bite-sized pieces if not already done.
In a large bowl, combine the softened cream cheese, sour cream, and buffalo sauce; whisk until smooth.
Fold in the shredded chicken and 1 cup of the cheddar cheese until evenly distributed. Stir in the optional celery if using.
Transfer the mixture to a 9x13 baking dish and spread in an even layer.
Top with the remaining 1/2 cup cheddar cheese and the 1/4 cup parmesan cheese in an even layer.
Bake until the dip is bubbly around the edges and the top is lightly browned, 20–25 minutes.
Remove from the oven and garnish with chopped green onion. Serve warm with crackers, bread, or fresh vegetables.
