Garlic Ginger Chicken Noodles

Cook rice noodles according to package directions, drain, and set aside.
Cut chicken into bite-sized pieces or thin strips. Slice bell pepper into strips and snap peas in half diagonally. Mince garlic and ginger.
In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, sesame oil, honey, and vegetable broth. Set sauce aside.
Heat peanut oil in a large skillet or wok over medium-high heat until shimmering.
Add chicken pieces and cook, stirring occasionally, until golden and cooked through (about 6–8 minutes). Transfer to a plate.
Add minced garlic and ginger to the same skillet and stir-fry for 30 seconds until fragrant.
Add bell pepper and snap peas; stir-fry for 2–3 minutes until crisp-tender.
Return chicken to the skillet and pour in the prepared sauce. Toss to coat.
Add cooked noodles to the skillet and toss everything together until the noodles are evenly coated and heated through (about 1 minute).
Divide among bowls or plates. Garnish with sliced green onion and sesame seeds if desired. Serve hot.
