Goulash Casserole
A baked casserole of seasoned meat, vegetables, and starch bound with sauce. The dish bakes until the ingredients meld and the top browns.

Preheat oven to 350°F. Cook egg noodles according to package directions; drain and set aside.
Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook until softened, about 5 minutes. Stir in minced garlic and cook 1 minute more.
Add ground meat to the skillet and break apart with a spoon, cooking until browned, about 8 minutes. Drain excess fat if needed.
Stir in paprika and tomato paste; cook 2 minutes until fragrant. Pour in beef broth and add carrot chunks. Simmer 10 minutes until carrots are nearly tender.
Transfer cooked noodles to a 9x13-inch casserole dish. Pour meat and vegetable mixture over noodles and stir to combine. Season with salt and black pepper.
Cover casserole with foil and bake for 25 minutes. Remove foil and bake uncovered for 15–20 minutes until the top browns slightly.
Let rest 5 minutes. Serve warm with a dollop of sour cream on each portion if desired.
