Ground Beef Tacos

Method
Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it into small pieces with a wooden spoon, until browned and no pink remains, about 5–7 minutes. Drain excess fat if needed.
Add diced onion to the skillet and cook, stirring, until softened, about 3 minutes. Stir in minced garlic and cook for 30 seconds.
Add cumin, chili powder, tomato paste, water, salt, and black pepper. Stir to combine, then simmer over medium heat for 5 minutes, until the mixture thickens slightly.
Warm tortillas in a dry skillet over medium heat for 30 seconds per side, or wrap them in a damp towel and warm in a microwave for 1 minute.
Place a warm tortilla on a plate. Add 2–3 tablespoons of cooked beef to the center.
Top with shredded cheese, lettuce, diced tomato, salsa, a dollop of sour cream, and fresh cilantro. Serve immediately.
