Dice the onion, carrot, celery, and zucchini into uniform small pieces; mince the garlic.
Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until no longer pink (about 8–10 minutes). Drain excess fat if needed.
Add diced onion, garlic, carrot, and celery to the cooked turkey. Sauté for 3–4 minutes until softened.
Stir in tomato paste and cook for 1 minute until darkened slightly. Add zucchini, vegetable broth, paprika, oregano, salt, and black pepper; stir to combine.
Simmer over medium heat for 5–7 minutes until vegetables are just tender and liquid reduces slightly. Taste and adjust seasoning as needed.
Divide cooked turkey mixture into portions. Serve warm over rice, pasta, grains, or vegetables, or store in separate containers for reheating throughout the week.
