Add the flour and stir constantly with a wooden spoon for 10–15 minutes until the mixture turns deep brown (chocolate roux). Be patient; this is the foundation of your gumbo's flavor. Watch carefully to avoid burning.

Lower heat to medium. Add the diced onion, celery, and bell pepper to the roux. Stir well and cook for 5 minutes until the vegetables begin to soften.

Add the okra (or greens) and the crab meat. Stir gently to combine and cook for 10–15 minutes more until the okra is tender and the crab is heated through.

Taste and adjust seasoning with salt and black pepper. Remove the bay leaves.
