High-Protein Breakfast Scramble
Scrambled eggs with swappable protein, vegetables, and cheese. Cooked on the stovetop in minutes, finished with fresh herbs and optional sauce.

Method
Dice all vegetables into small, even pieces. If using meat protein, cook it in a skillet until done, then set aside. Crack eggs into a bowl, whisk with a fork until uniform, and season lightly with salt.
Heat butter or oil in a non-stick skillet over medium heat until foaming.
Add diced vegetables (if using) and sauté for 2 minutes until slightly softened.
Pour in whisked eggs and let sit for 10–15 seconds without stirring. Then gently push cooked egg toward the center of the pan with a spatula, tilting the pan to let uncooked egg flow to the edges. Repeat every 15–20 seconds until mostly set but still moist, about 4–5 minutes.
Fold in cooked protein, cheese, and additional vegetables. Cook for another 30 seconds until cheese melts slightly and eggs are soft-set (not overdone).
Transfer to a plate, garnish with fresh herbs and black pepper, and serve immediately with hot sauce or salsa on the side.
