Key Lime Pie

Preheat oven to 350°F (175°C). Mix crushed graham crackers, melted butter, and sugar in a bowl until the mixture resembles wet sand.
Press the mixture firmly into a 9-inch pie dish, covering the bottom and sides evenly. Bake for 5 minutes until lightly set, then remove and cool slightly.
In a bowl, whisk together softened cream cheese, sweetened condensed milk, egg yolks, key lime juice, vanilla extract, and salt until smooth and well combined.
Pour the filling into the pre-baked crust, spreading evenly.
Bake at 350°F for 10–12 minutes until the filling is set but still slightly jiggly in the very center. Remove from oven and cool to room temperature.
Refrigerate for at least 2 hours (preferably overnight) until fully chilled and set.
Top with whipped cream and a sprinkle of fresh lime zest. Slice and serve cold.
