Lo Mein

Cook egg noodles according to package directions; drain and set aside.
Slice or dice your chosen protein into bite-sized pieces. Julienne or slice vegetables thinly. Mince garlic and ginger. Chop green onion white parts separately from green tops.
In a small bowl, whisk together soy sauce (or chosen sauce base), rice vinegar, honey, and vegetable broth; set aside.
Heat 2 tablespoons cooking oil in a wok or large skillet over medium-high heat until shimmering.
Add protein and cook until mostly cooked through (2–3 minutes for thin pieces); transfer to a plate.
Add garlic and ginger to the wok; cook for 30 seconds until fragrant. Add white parts of green onion and cook for another 30 seconds.
Add vegetables to the wok and stir-fry for 2–3 minutes until tender-crisp.
Return protein to the wok. Add cooked noodles and sauce mixture; toss everything together over heat for 1–2 minutes until heated through and lightly glazed.
Transfer to serving bowls. Garnish with sesame seeds and green onion tops. Serve immediately.
