Vegetable Lo-Mein

Cook noodles according to package directions. Drain, set aside, and lightly toss with a touch of sesame oil to prevent sticking.
In a small bowl, whisk together vegetable broth, soy sauce, sesame oil, and rice vinegar. Set sauce aside.
Mince garlic and ginger. Cut primary and secondary vegetables into bite-sized pieces or thin slices. Cut green onions into 2-inch pieces.
Heat cooking oil in a large wok or skillet over medium-high heat. When the oil shimmers, add minced garlic and ginger; stir-fry for 30 seconds until fragrant.
Add primary vegetable and stir-fry for 2–3 minutes until beginning to soften. Add secondary vegetable and continue cooking for another 2 minutes.
Add cooked noodles and green onions to the wok. Pour in the sauce and toss everything together with tongs until noodles are coated and heated through, about 2–3 minutes.
Taste and adjust seasoning with soy sauce, vinegar, or red pepper flakes as needed.
Transfer to serving bowls or plates and garnish with sesame seeds. Serve immediately while hot.
