Manicotti
Tube pasta stuffed with ricotta, cheese, and protein, then baked in tomato sauce. Assembled tubes are baked until the filling sets and the sauce bubbles around the edges.

Preheat oven to 375°F. Bring a large pot of salted water to a boil and cook manicotti tubes 1 minute under the package direction (they should be slightly firm). Drain, lay flat on a sheet of parchment to cool.
Heat olive oil in a skillet over medium-high heat. Add onion and cook until softened, about 3 minutes. Add garlic and cook 1 minute. Add ground turkey, breaking it apart, and cook until no longer pink, about 5–7 minutes. Season with salt and pepper. Cool slightly.
In a large mixing bowl, combine ricotta, 1 cup mozzarella, parmesan, egg, cooked turkey mixture, and spinach (if using). Mix gently until blended. Taste and adjust seasoning.
Spread 0.75 cup marinara sauce across the bottom of a 9x13 inch baking dish.
Transfer filling to a piping bag fitted with a large round tip (or spoon it). Pipe or spoon filling into each cooled manicotti tube, holding it over the pan. Lay tubes seam-side down in a single layer in the pan.
Pour remaining marinara sauce evenly over the tubes. Sprinkle the remaining 0.5 cup mozzarella over the top.
Cover the dish with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until the sauce bubbles and cheese is melted.
Let rest 5 minutes before serving.
