A Cajun corn dish cooked down with bell peppers, onions, and aromatics until tender and caramelized. The vegetables soften into a thick, jammy consistency with charred edges.

Dice the bell pepper, onion, and celery into roughly 1/4-inch pieces. Mince the garlic. Slice the green onion for garnish.
Melt butter in a large skillet over medium-high heat.
Add the onion, celery, and bell pepper. Cook, stirring occasionally, until the vegetables begin to soften and char at the edges, about 8–10 minutes.
Stir in the garlic and cook for 1 minute until fragrant.
Add the corn kernels, cayenne pepper, salt, and black pepper. Stir well to combine.
Reduce heat to medium and cook, stirring frequently, until the corn is tender and the mixture has begun to stick slightly to the bottom of the pan and caramelize, 10–12 minutes. The edges should show dark, charred spots.
Transfer to a serving bowl and garnish with sliced green onion. Serve warm.
