Mango Salsa

Peel and pit the mango, then cut the flesh into 1/4-inch cubes and place in a medium mixing bowl.
Finely dice the red onion, seed and mince the jalapeño, chop the cilantro, and seed and dice the cucumber.
Add the diced red onion, jalapeño, cilantro, and cucumber to the bowl with the mango.
Pour in the fresh lime juice and add the honey and salt.
Gently toss all ingredients together until well combined, being careful not to crush the mango.
Taste and adjust seasoning with additional lime juice, honey, or salt as needed. Serve immediately as a topping for grilled fish, chicken, tacos, or grain bowls, or as a fresh dip with tortilla chips.
