Mediterranean Halloumi Wrap
A warm wrap filled with crispy halloumi cheese, roasted vegetables, and herbaceous sauce. Soft tortilla encloses caramelized halloumi, fresh greens, and Mediterranean seasonings.

Slice halloumi cheese into 1/4-inch thick slabs. Prep all vegetables: slice cucumber and red onion, halve cherry tomatoes, pit and halve olives. Loosely pack spinach or arugula into a bowl.
Heat olive oil in a large skillet over medium-high heat. Once hot, add halloumi slices in a single layer and cook 2–3 minutes per side until golden brown and slightly crispy at the edges. Transfer to a plate.
In a small bowl, whisk together lemon juice, minced garlic, and dried oregano. Stir in 1/4 cup tahini-lemon sauce (or prepare a simple dressing from tahini, lemon juice, garlic, and water).
Warm tortillas in a dry skillet for 20 seconds per side. Spread 2 tbsp sauce on the center of each tortilla.
Layer spinach, then cooked halloumi slices, cucumber, cherry tomato halves, red onion, kalamata olives, and roasted red peppers on the lower third of each tortilla.
Fold the sides of each tortilla toward the center, then roll tightly away from you. Serve immediately, cut in half if desired.
