Mediterranean Salmon Sheet Pan
Sheet pan dinner combining salmon fillet with roasted vegetables and Mediterranean seasonings. Baked on a single pan until salmon is opaque and vegetables are tender.

Method
Preheat oven to 400°F (200°C).
On a large sheet pan, arrange zucchini, red onion, cherry tomatoes, and kalamata olives in a single layer.
In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, red pepper flakes, salt, and black pepper.
Drizzle half of the dressing over the vegetables and toss to coat. Roast vegetables in the oven for 8 minutes.
Remove pan from oven. Push vegetables to the sides and arrange salmon fillets in the center of the pan. Drizzle salmon with remaining dressing.
Return to oven and bake for 10–12 minutes, until salmon is opaque and flakes easily with a fork.
Divide salmon and roasted vegetables among serving plates. Drizzle any pan juices over the top and serve immediately.
