Patatas Bravas
Crispy fried potato cubes served with swappable sauce and topping combinations. A Spanish tapa built on potatoes, sauce, and garnish.

Method
Cut potatoes into 1-inch cubes. Soak in cold water for 10 minutes; drain and pat completely dry with paper towels.
Heat oil in a deep pot to 350°F. Working in batches, fry potatoes 8–10 minutes until golden and crispy. Remove with a slotted spoon and drain on paper towels. Season with salt while hot.
Combine ketchup (or chosen sauce base), minced garlic (or sauce accent), and vinegar (or chosen liquid) in a small bowl. Stir until smooth.
Transfer fried potatoes to a serving bowl. Drizzle sauce over potatoes and toss to coat. Scatter topping protein and topping vegetable over the top.
Serve warm, using wooden picks for eating.
