Method

Slice the meat very thin (partially freeze for 30 minutes if needed for easier slicing).

Slice the onion and bell pepper into thin strips. Mince the garlic.

Heat 0.75 tbsp olive oil in a large skillet over medium-high heat. Add the onion and bell pepper, season with salt and pepper, and sauté until soft and lightly browned, about 6–8 minutes. Transfer to a plate.

Add the remaining 0.75 tbsp olive oil to the same skillet. Add the sliced meat and garlic, breaking it apart as it cooks, and cook until the meat is browned and no longer pink, about 4–5 minutes. Season with salt and pepper.

Return the peppers and onions to the skillet with the meat and stir gently to combine. Cook for 1 minute.

Top the meat mixture with cheese and cover the skillet with a lid or foil for 1 minute to allow the cheese to melt.

Warm each tortilla in a dry skillet over medium heat for 10–15 seconds per side.

Spread 0.5 tbsp condiment on each warm tortilla. Divide the meat-and-cheese mixture between the two tortillas and roll tightly, folding in the sides as you go.

Serve immediately while warm.
