Philly Cheesesteak

Slice the protein thinly, against the grain if working with beef. Slice the onion and bell pepper into thin strips. Have the cheese ready.
Heat olive oil in a large skillet over medium-high heat. Once hot, add the sliced onions and peppers; sauté for 5–7 minutes until softened and slightly caramelized.
Push the vegetables to the side of the pan. Add the sliced protein to the empty side and cook for 3–4 minutes, stirring occasionally, until cooked through. Season with salt, black pepper, and garlic powder.
Mix the meat together with the vegetables and cook for another 1–2 minutes. Top with cheese slices and cover the pan briefly until melted, about 1 minute.
Lightly toast the hoagie rolls if desired. Divide the meat and vegetable mixture evenly between the rolls. Add mayonnaise or other condiments as desired and serve immediately.
