Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
Scrub potatoes under cold running water and pat dry thoroughly with paper towels. Cut each potato lengthwise into 1/2-inch thick wedges, leaving the skin on.
In a large bowl, toss wedges with olive oil, salt, black pepper, and your chosen seasoning blend until evenly coated.
Arrange wedges in a single layer on the prepared baking sheet, skin side down.
