Coleslaw

Wash and pat dry the cabbage and other vegetables. Thinly slice or shred the cabbage and carrot using a knife, mandoline, or food processor.
Prepare your supporting vegetable (cucumber, bell pepper, celery, etc.) by dicing, shredding, or slicing into thin pieces. Thinly slice the red onion or other aromatic.
In a large mixing bowl, combine the shredded cabbage, carrot, supporting vegetable, and aromatic. Toss together.
In a small bowl, whisk together the dressing base (mayonnaise, Greek yogurt, or tahini), acid (vinegar or citrus juice), sweetener, salt, and any flavor modifier (mustard, sriracha, etc.) until smooth.
Pour the dressing over the vegetables and toss until evenly coated. Let sit for 5–10 minutes to allow flavors to meld and vegetables to soften slightly.
Taste and adjust seasoning. Top with sesame seeds, fresh herbs, or other crunchy toppings as desired. Serve immediately or chill until ready to serve.
