Sausage and Peppers Pasta
Pasta tossed with cooked sausage, sautéed bell peppers, and onions in a tomato-based sauce. The components are simmered together and finished with fresh herbs and cheese.

Bring a large pot of salted water to a boil. Slice the bell peppers into strips and slice the onion into thin rings. Mince the garlic.
Heat olive oil in a large skillet over medium-high heat. Add the sausage, breaking it up with a wooden spoon as it cooks, until browned, about 5–7 minutes. Transfer to a paper towel-lined plate.
In the same skillet, add the sliced peppers and onion; sauté over medium-high heat until softened and lightly caramelized, about 8–10 minutes. Add the garlic and cook for 1 minute until fragrant.
Return the sausage to the skillet and stir in the marinara sauce. Simmer for 5–10 minutes until flavors meld. Season with salt and pepper.
While the sauce simmers, add the pasta to the boiling water and cook according to package directions until al dente. Drain and reserve 1 cup pasta water.
Add the cooked pasta to the sausage and pepper sauce and toss to combine, adding pasta water a splash at a time if the dish is too dry. Top with grated Parmesan and fresh parsley. Serve immediately.
