Sausage Breakfast Casserole
Baked casserole combining cooked sausage, eggs, cheese, and bread cubes into a unified dish. Assembled the night before and baked until set and golden.

Butter a 9x13 baking dish. Brown the pork sausage in a skillet over medium-high heat, breaking it into small pieces as it cooks, 5–7 minutes. Drain excess fat if needed. Set aside.
Cube the bread and spread it in the prepared baking dish. Scatter the cooked sausage and diced onion over the bread.
In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Pour the egg mixture over the bread and sausage.
Sprinkle the shredded cheddar cheese evenly over the top. Press gently to help the bread absorb some custard. Cover with plastic wrap and refrigerate for at least 30 minutes (or overnight).
Preheat the oven to 350°F. Uncover the casserole and bake for 45–50 minutes, until the custard is set and the top is light golden.
Let rest 5 minutes before serving. Portion into squares and serve warm.
