Dice the protein into bite-sized pieces (if using tempeh, bacon, sausage, or firm tofu). Mince the aromatic vegetable and garlic. Cut the second and third vegetables into small, evenly-sized pieces.
Heat olive oil in a medium saucepan over medium-high heat. Sauté the protein until lightly browned (2–3 minutes). Add the minced aromatic and garlic; cook until fragrant (1 minute).
Stir in the secondary and tertiary vegetables; cook for 2–3 minutes until slightly softened. Add the primary seasoning blend and stir to coat.
Pour in the vegetable broth and bring to a simmer. Stir in the steel-cut oats slowly to prevent lumps.
Reduce heat to low and simmer uncovered for 25–30 minutes, stirring occasionally, until oats are tender and creamy and most liquid is absorbed. Add more broth if the mixture becomes too thick before oats are done.
Stir in the finishing sauce (if using). Taste and adjust salt and pepper. Transfer to a bowl.
