Sheet Pan Salmon Dinner
Baked salmon fillet with roasted vegetables on one pan. Fish and vegetables cook together, creating a complete meal with minimal cleanup.
Ingredients
Method
Preheat oven to 400°F (200°C).
On a large sheet pan, toss yellow squash, red onion, broccoli, and cherry tomatoes with 2 tablespoons olive oil; season with salt and pepper. Spread in a single layer on one half of the pan.
Pat salmon dry. Place skin-side down on the other half of the pan. Brush with remaining 1 tablespoon olive oil. Top with minced garlic and lemon slices. Season with salt and pepper. Nestle rosemary sprigs on top.
Bake until salmon flakes easily with a fork (about 12–15 minutes depending on thickness) and vegetables are tender-crisp, about 20–25 minutes total.
Transfer salmon and vegetables to a serving platter. Serve warm.
