Skillet Brownie for Two
A warm, fudgy brownie baked in a cast-iron skillet and served straight from the pan with your choice of mix-ins and toppings. Customize the chocolate richness, add nuts or fruit, and finish with your favorite flavor pairing.
Ingredients
Method
Preheat your oven to 350°F. Place an 8-inch cast-iron skillet on the stovetop over medium heat and coat the interior lightly with coconut oil or butter; set aside to keep warm.
In a small bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
In another bowl, combine melted coconut oil, vanilla extract, and water or milk. Stir until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined—do not overmix. Fold in chocolate chips and/or nuts if using.
Pour the batter into the warm skillet (it should sizzle slightly). Spread evenly and top with additional mix-ins or a sprinkle of sea salt if desired.
Bake for 16–18 minutes, until the edges are set but the center is still soft and fudgy when poked with a toothpick.
Remove from the oven and let cool in the skillet for 2–3 minutes. Divide between two bowls or plates and serve warm, optionally with whipped cream, vanilla ice cream, or fresh berries.
