Line a small baking sheet or plate with parchment paper.
In a mixing bowl, combine cocoa powder, peanut butter, mashed banana, honey, melted coconut oil, vanilla extract, and sea salt. Stir well until fully incorporated.
If using powdered sugar, sift it in and fold gently until the mixture is smooth and well combined. Taste and adjust sweetness or salt as desired.
Using a small ice cream scoop or spoon, form the mixture into 12 equal-sized balls and place them on the prepared parchment paper.
If coating with chocolate, melt the dark chocolate and dip each bite into it, allowing excess to drip off. Return to parchment paper.
