Slice or chop your chosen aromatics and vegetables. If using sausage links, score them lightly with a knife to prevent bursting.
Heat oil in a large skillet over medium-high heat. Add sausage and cook 5–7 minutes until browned on the outside; remove and set aside.
In the same skillet, sauté aromatics for 2–3 minutes until fragrant. Add your chosen vegetable and cook 4–5 minutes until just tender.
Return sausage to the skillet. Stir in your chosen sauce or glaze, coating everything evenly. Cook 2–3 minutes until heated through.
Season with herbs, salt, pepper, and a squeeze of acid (if using). Taste and adjust seasoning.
Serve hot over rice, pasta, bread, or alongside grilled vegetables.
