If using whole turkey, remove giblets and neck; pat the bird dry inside and out with paper towels. Let it sit at room temperature for 30 minutes before smoking.
Prepare your chosen marinade or rub. Mince garlic, chop rosemary, and combine with olive oil, salt, black pepper, and paprika to create a base rub. Adjust with additional spices or use a prepared component marinade for flavor variations.
Rub the turkey (inside cavity and exterior) generously with your prepared seasoning mixture or marinade. If using a wet marinade, let it sit for 4–8 hours or overnight in the refrigerator for optimal flavor.
If marinating, remove turkey from refrigerator 1 hour before smoking. Stuff the cavity with halved lemons and quartered onions if desired.
Preheat your smoker to 225–250°F (107–121°C) using hardwood smoke (oak, hickory, apple, or cherry depending on desired flavor intensity).
Place turkey on smoker grates, breast-side up. Smoke for 12–15 minutes per pound (approximately 3–4 hours for a 12–16 lb bird). Maintain consistent temperature and smoke.
Insert a meat thermometer into the thickest part of the thigh (not touching bone). Turkey is done when internal temperature reaches 165°F (74°C).
Optional: In the final hour of smoking, brush turkey every 15 minutes with your chosen glaze (honey-based, maple, or teriyaki) for a glossy, caramelized finish.
Remove turkey from smoker and rest, uncovered, for 15–20 minutes to allow juices to redistribute.
Carve turkey and serve with pan drippings, gravy, or your favorite sauce. Pair with smoked sides or traditional accompaniments.
