Soup Beans

Method
Dice onion, celery, and carrot into 0.5-inch pieces. Mince garlic.
Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3 minutes, stirring occasionally.
Add celery, carrot, and garlic; cook for 2 more minutes until fragrant.
If using meat protein, add diced bacon or other protein now and cook for 2–3 minutes until beginning to color.
Pour in broth and add drained beans. Bring to a gentle boil.
If using starch vegetable, add diced potato or other vegetables now.
Add salt, black pepper, and herb seasoning blend (if using). Reduce heat to low and simmer for 30–35 minutes until vegetables are tender.
Taste and adjust seasoning as needed. Serve hot in bowls.
