Rinse rice under cold water until water runs clear. Cook according to package directions or in a rice cooker with 2 cups water until tender, about 18–20 minutes.
While rice is still warm, transfer to a mixing bowl and gently fold in rice vinegar, sugar, and salt until evenly distributed. Let cool to room temperature.
Slice or julienne cucumber, carrot, and avocado. Cook edamame if using fresh (boil 4–5 minutes). Thinly slice green onion.
If using raw salmon or tuna, slice thinly against the grain. If using cooked protein (chicken, shrimp, tofu), cut into bite-sized pieces.
Divide seasoned rice between bowls. Arrange cucumber, carrot, edamame, avocado, and protein on top in sections or mixed throughout.
Top with nori strips, sesame seeds, and green onion. Drizzle with ponzu sauce or spicy mayo. Serve immediately.
