Sweet Potato Casserole

Preheat oven to 350°F. Peel and cube sweet potatoes into 1-inch pieces.
Boil or steam sweet potato cubes until fork-tender, 12–15 minutes. Drain well.
Transfer sweet potatoes to a large mixing bowl. Add 4 tbsp butter, 0.5 cup brown sugar, cinnamon, nutmeg, salt, and vanilla extract.
Mash or beat with a hand mixer until smooth (or lumpy, if preferred). Spread into a greased 9x13 inch baking dish.
In a medium bowl, combine walnuts, flour, and 0.5 cup brown sugar. Cut in cold butter until mixture resembles coarse crumbs.
Sprinkle streusel evenly over the sweet potato mixture.
Bake at 350°F until the top is golden and the filling is bubbling at the edges, 40–50 minutes.
Cool for 5 minutes before serving. Serve warm.
