Taquitos
Crispy hand-held rolled tortillas filled with your choice of protein and vegetables, fried until golden and served with your favorite dipping sauce. A versatile appetizer or snack that works with countless protein and filling combinations.

Warm the corn tortillas briefly over a gas flame or in a skillet to make them pliable, then wrap in a clean kitchen towel to keep warm.
In a mixing bowl, combine the shredded protein with taco seasoning, diced bell pepper, diced onion, and shredded cheese. Mix until evenly distributed.
Lay one warm tortilla on a cutting board. Place 2–3 tablespoons of filling along the center, leaving space at the edges.
Roll the tortilla tightly from one side to the other, then secure seam-side down on a plate. Repeat with remaining tortillas and filling.
Heat oil to 350°F in a deep skillet or air fryer to 375°F. Working in batches, fry taquitos seam-side down for 2–3 minutes per side until golden and crispy. (Air-fry at 375°F for 10–12 minutes, shaking the basket halfway.)
Transfer cooked taquitos to a paper-towel-lined plate to drain excess oil.
Arrange taquitos on a serving platter. Mix sour cream with salsa or hot sauce for a dipping sauce, and serve alongside with additional salsa or your favorite toppings.
